BAKED CHICKEN WITH HOT, SPICY RED PEPPER SAUCE Ingredients: 1 4lb. Chicken, skinned, cut into serving pieces 2 tbsp. Olive oil Salt and pepper to taste ½ tsp.cayenne powder Chopped green onions SPICY RED PEPPER SAUCE 1 small yellow onion, chopped finely 1 large red beel pepper, seeded, chopped 1 thin red chili, seeded, chopped ½ cup of dry white wine or water ½ cup red wine vinegar ½ tsp. Dried tarragon ½ tsp. Granulated sugar ½ cup chicken broth ¼ cup heavy cream 2-3 drops of hot pepper sauce your choice |

Method: 1.Preheat oven to350f (175c) Rinse the chicken pieces under cold running water, pat dry using paper towels. 2.Rub all the chicken pieces with the oil, place on a wire rack in a roasting pan. Season with salt & pepper and cayenne powder. Bake for approximately 30 to 40 minutes, until juices run clear when the meat is pierced with a knife. 3.In a small pot, add the onion bell pepper, chili, tarragon, wine and vinegar. Bring to a boil over high heat. Reduce heat to low setting, and simmer, uncovered. Stir occasionally for 5-10 minutes, or until liquid has almost evaporated. ( Careful not to burn the sauce.) 4.Remove pot from the heat; Transfer the mixture to a food processor or a blender. Blend/process for 1 minute, or until nice and smooth. Scrap down the sides of the bowl whenever necessary. Return the puree to the pot. 5.Stir in sugar, stock and cream. Simmer on low heat. Stir occasionally for 4-5 minutes, or until thickened slightly. 6.Transfer the chicken pieces to a serving dish and pour the sauce, covering the chicken pieces. Garnish with chopped green onions, if you choose, serve immediately. Serve with steamed vegetables and rice. ENJOY!!!! |
