CHILI LOAF Ingredients: 1lb. Italian sausage 1lb. ground beef 1 10- ounce can enchilada sauce 1 8- ounce can tomatoes, cut up 1 8- ounce can red kidney beans, drained 1 cup corn chips,crushed 1/4 cup small onion, finely diced 1/2 cup hot, spicy ketchup 1/2 cup shredded cheese, (2-ounces) 2 eggs, slighly beaten 2 tbsps. parsley, snipped 2 tsps. hot sauce (your choice) 1 tsp. seasoned salt 1 tsp. cayenne powder 1 tsp. chili powder. 1/2 tsp. extra-hot hourseradish Dash, black pepper |

Method: 1.Preheat oven to 350 (175) 2.In a bowl combine 2 eggs, 2 tbsps of the enchilada sauce, undrained tomatoes, hot ketchup, beans, hot sauce, corn chips, onion, horseradish, parsley, cayenne powder, seasoned salt, pepper, and chili powder. 3. Add italian sausage and ground beef; mix well. 4. Pour into a meatloaf pan and cook in oven. 45-60 minutes. Depends on oven. 5. In a pan, pour in the remaining enchilada sauce and heat through. 6.Pass sauce and cheese to top each serving. Makes 8 servings. Can serve with salad ( your Choice!) ENJOY!!!!! |
