This gives heat with great flavour. Ingredients : 1lb cubed beef 3 red chilies, seeded, crushed 3 cloves garlic, crushed 3 tbsp. vinegar 2 tsp. tomato paste 2 tbsp. curry powder or curry paste (Vindaloo) 2 bay leaves 2 tsp. brown sugar 2 tsp. turmeric 1 tbsp. oil 1 tbsp. cornstarch 1 tbsp. lemon juice 1 tsp. seasoned salt 1 tsp. mustard seed 1 tsp. each of cinnamon, cloves, ginger, basil, black pepper, ground cayenne, cumin, & coriander one cup of beef broth |

Method: 1. Melt oil in large frying pan on low heat. Add cubed beef and brown all sides until golden brown for approximately 4 - 5 minutes. 2. Add onions, chilies, garlic, curry powder, turmeric, spices and mustard seed. Stir in 2 -3 minutes 3. In a small bowl, mix together tomato paste, sugar, lemon juice, and beef broth. Then pour over the meat gently. 4.Cover with lid. Simmer on low heat for one hour. Stir occasionally. Meat should be tender. 5. Add more stock or water if the mixture begins to dry out. If you want sauce to be thickened, add a little more cornstarch. Serves 4 - 6. One Hot Dish! Serve with rice and one of my easy side dishes TOMATO, CUCUMBER, AND ONION SIDE DISH 1 tomato, diced into small pieces 1 small onion, diced finally cucumber, peeled, cut into small pieces. In a small dish mix together the tomato, cucumber, and onion. This side dish will compliment your meal. MINT YOGURT 1 cup yogurt 2 tbsp. fresh mint, diced In a small dish, add one cup of yogurt. Dice up the fresh mint. Pour it into the yogurt and mix up. I find a tablespoon of this, along side of the rice, helps when ones mouth is on fire. It really cools it down. Why go out to an Indian restaurant, when it's as easy as this? |
