HOT CHICKEN CURRY

Method: 1. In a medium pot, heat the oil and add onions, garlic, apple, ginger and fenugreek seeds. Fry for about five minutes or until golden brown. Lower heat to low. 2. Using a bowl, mix together the coriander, cumin, chilli powder, salt, tomatoes, curry paste and lemon juice. 3. Pour the mixture into the pot, and turn the heat up to medium. Fry for 3 minutes. 4.Add chicken pieces and fry for around 5-7 minutes. 5. Add bell peppers and chillies. Lower the heat. Cover. Simmer for 20 minutes or until chicken is cooked. This curry has a lovely, nice thick sauce. Serve on a boiled bed of rice. PLEASE ENJOY!!! |
