PARTY-TIME CHICKEN There's no need to cook all day to enjoy this delight …..Just follow this magic recipe! Ingredients: 4 chicken legs (drumsticks and thighs) 2 tbsps. All-purpose flour 1 tsp. Seasoned salt 1/8 tsp. Black pepper 1/8 tsp. Cayenne powder ¼ cup vegetable oil 2-4 drops, hot pepper sauce of your choice 2 pkg's Spanish-rice mix 1 pkg. (6-8 oz's.) sliced Italian assortment cold cuts 1 red habanero or 2 red chilies, seeded, diced 1 pkg. (5 oz's.) frozen cooked deveined shrimps, thawed 2 tbsps. Instant chicken bouillon 4 cups, hot water |

Method: 1.Cut chicken legs into drumsticks and thighs. Shake in paper bag with flour, cayenne powder, salt and pepper to coat evenly. 2.Using a large frying pan, sauté slowly in vegetable oil, add pepper sauce to oil. Simmer for about 30 minutes or until fork-tender; Place in a casserole dish with tight fitting cover. 3.Sprinkle Spanish rice right from package to cover chicken completely; top with sliced meats, then shrimps. 4.Heat chicken bouillon and water to boiling in the same frying pan, stirring until bouillon is dissolved; Pour over mixture in casserole. Cover. 5.Bake in oven 350 (175) for 30 minutes or until it's bubbly-hot. A wonderful dish that friends and family will rave about! A sure "WINNER!" ENJOY!! |
