Chili ButtonSAVOURY SHRIMP

This is an excellent appetizer. ENJOY!

Ingredients :
20 large, peeled shrimp
5 tbsp. lemon juice
3 tbsp. oil
2 tsp. brown sugar
2 tsp. chili powder
2 tsp. coriander
1 tsp. cumin
1tsp ground cayenne
1 glove garlic, crushed
1 red chili, seeded, diced
1 small onion cut into rings
1 large tomato, sliced into thin wedges
1 lemon, sliced into wedges
½ tsp. of black pepper
A sprig of parsley

Method:
1.Remove shrimp from shell, and rinse them under cold water. Use a sharp knife, making slit along the back of each shrimp. Open into a butterfly shape.
2.In a small bowl, mix together all the ingredients, with the exception of shrimp, chili, tomato, onion, lemon wedges and parsley sprig.
3.Using a small casserole dish with lid, add sliced tomatoes, onion rings
4.Once mixture is made, coat each shrimp on all sides and place in dish, with remaining mixture, pour over shrimp.
5.Broil them in oven 10 – 15 minutes.
Garnish at both sides with lemon wedges and a sprig of parsley.

Serve right away. They taste just as good as they look.
