SPICED FISH IN A FIERY, HOT SAUCE Ingredients: 2 lbs. white fish 2 lbs.ground turmeric mixed in with a little water, enough to form a paste 1 tsp.seasoned salt 2 tbsps. lemon juice 7 tbsps. vegetable oil for frying 1 tsp. grated lemon grind 1 cup water 3 tbsp. dark soya sauce 1-2 drops, hot sauce ( Your choice.) SPICE PASTE 6 red chili peppers 1 lrg. onion 5 cloves garlic, chopped and crushed 5 skinned almonds, crushed 1 tsp. ground ginger 1 tbsp. lime juice ( Or lemon juice.) salt and sugar to taste |

Method: 1.Cut fish into slices. Coat with turmeric paste, seasoned salt, and lemon grind. Let stand 10 minutes. 2.Heat the oil in a wok or pan, add the fish and fry on both sides, until a golden brown. 3.Drain and set aside. 4.Grind ingredients for spice paste using a blender and mix until smooth, then fry for just a few moments. 5.Add lemon juice, water, soya sauce and hot sauce drops. 6.When mixture has come to a boil, add the fried fish. Stir and let simmer until the sauce has thickened. 7.Before serving, skim off any excess oil. SERVES 4. ENJOY !!! |
