Chili Bar
SPICY MUSSELS

Ingredients:

2 tbsp. Olive oil

1 small onion, chopped finely

8 fl oz dry white wine

1 ripe, red tomato, skinned,seeds removed, chopped

1 clove garlic, crushed

1 red and green dried chilli,soaked and seeds removed, chopped

11oz shelled mussels, blanched

1-2 drops of your favorite hot sauce

Salt and pepper to taste

Method:
  1. Using a large, heavy pan, heat the olive oil.
  2. Add the onion and cook gently, until soft, but still pale.
  3. Increase the heat and add the wine, tomato, garlic and chilli and cook until the liquid is reduced by half.
  4. Add the mussels and allow them to heat through.
  5. Add the hot sauce, then salt and pepper to taste.

Garnish with Basil or Coriander leaves. This tasty little dish will impress your family and friends.
