SPICY ORANGE POT ROAST A great surprise awaits you when you try this pot roast! Try this for a sure winner! Ingredients: 1 3 to 4lb beef pot roast 1/2 cup orange juice 1/4 cup brown sugar 1 orange peeled and sliced 2 tbsp. shortening 2 tbsp. cornstarch 1 tbsp. all-purpose flour 1 tsp. salt 1 tsp. paprika 2 tsps. hot pepper sauce of your choice 1 tsp. grated orange peel 1/2 tsp. ground nutmeg 1/4 tsp. dried thyme leaves, crushed 1/4 tsp. black pepper 1/4 tsp. oregano |

Method: 1.Coat pot roast with mixture of flour, paprika, hot pepper sauce, oregano, salt and pepper. 2.In large skillet, brown the meat on all sides in hot shortening. (Electric skillet 350) 3. Pour off excess fat. Combine Shortening, orange peel,orange juice,brown sugar, nutmeg. pour over meat. Cover. Reduce heat to 220. Simmer till meat is tender, 2 to 21/2 hours. Add water to cooking, if necessary. 4.Cut orange slices in half, add to skillet. Cover, just enough to heat oranges, about 5 minutes. Remove roast to platter, keep warm. 5.Blend cornstarch and 2 tbsp. cold water, stir into pan juices. Cook and stir until thickened and is bubbly. Serve with pot roast.
