MULTICOLOUR TACOS

Green, White, and Red Tacos

Ingredients:

1 small onion, chopped finely
1 tbsp. Cooking oil
1 8 oz. Can tomato sauce
2 serrano or jalapeno pepper’s, seeded and diced
¼ tsp. Seasoned salt
2 cups chopped cooked chicken or beef
2 tbsp. Cooking oil
12 6-inch tortillas
2 cups Guacamole (Recipe for this to follow)
½ cup sour cream

Method:

1.Simmer onion in 1 tbsp. Oil, cook until soft, stir in tomato sauce, peppers, and seasoned salt. Continue simmering. Cover for 5 minutes. Stir in chicken or beef; heat through. Keep warm

2.Using a small skillet heat the remaining 2 tbsps. Cooking oil. Holding tortilla with tongs, dip each tortilla into the hot oil or until limp.

3.Drain on paper towel. Spoon a little green guacamole, white sour cream, and red meat mixture on one half of each tortilla.

4. Fold in half with filling; serve immediately

Serves 6. A sure pleaser and a nice change from hamburgers!!


GUACAMOLE

Ingredients:

2 medium avocados, peeled, seeded and cut up
½ small onion, cut up
2 tbsp. Lemon juice
1 clove garlic, minced
½ tsp. Salt
¼ tsp. Pepper

Method:

1.Using a food processor or blender, place avocados, onion, lemon juice, garlic, salt and pepper; cover and blend till well combined.

2.Use this for your sauce or this can be even used as a chip dip.

Makes about 1-½ cups.
