TURKEY AND SAUSAGE CASSOULET

This Turkey and Sausage Cassoulet combination is spiced to perfection. Dried beans, chopped carrot, celery, onion, hot pepper's (If chosen) enhance the hearty full flavor of this dish. It's a meal no one can refuse!

Ingredients:
11/4 cups, dry navy beans
½ lb. Bulk pork sausage
3-4 Skinless, boneless turkey breast, cut up
½ cup carrot, copped
½ celery, chopped
½ cup onion, chopped
11/2 cups tomato juice
1 red and green chili, seeded and diced. (Optional for those who love HOT foods)
1 tbsp. Worcestershire sauce
2 tsps. Instant beef bouillon cubes
1tsp. Seasoned salt
¼ tsp. Dried sage, crushed
½ tsp. Dried basil, crushed
½ tsp. Dried oregano, crushed
½ tsp. Paprika
Dash of black pepper
Sprig of parsley to garnish

Method:
ADVANCE PREPARATION: In a large pot bring 4 cups of water and beans to a boil. Reduce heat and simmer, covered, for around 11/2 hrs. Pour beans and liquid into a bowl. Refrigerate over night. Roll sausage into 18 balls; brown using a skillet. Remove meatballs; reserve drippings in skillet. Cover meatballs; refrigerate overnight. Sprinkle turkey with seasoned salt and pepper, brown in the reserved drippings. Remove turkey. Cover. Refrigerate over night.

1. Using a crockery cooker, place turkey, meatballs, carrot, celery, onion and chili pepper's (if chosen to use in this recipe) Drain beans; mix well with remaining ingredients. Pour all over meat mixture.
2. Cover. Cook on a low heat setting around 8 hrs. Remove turkey and meatballs. Slightly mash bean mixture; serve with meat. Add sprig of parsley to garnish this savory dish! ENJOY!
