ZESTY MEATLOAF " A tasty way to serve meatloaf...a sure pleaser and a refreshing change" This is what my mother said and mothers are always right! Ingredients: 2lbs. ground beef 2 carrots, peeled, grated fine 2 eggs 1 can condensed tomato soup 3/4 cup tomato juice 3/4 cup hot ketchup 1/4 cup soft bread crumbs 2 tsp. oregano 2 tsp. flaked parsley 2 tsp. seasoned salt 11/2 tsp. garlic, chopped finely 1 tsp. extra hot horseradish 1 tsp. black pepper 1 tsp. red cayenne |

Method: 1. Preheat oven at 350f (175c)Place all ingredients into a bowl. Mix well. Pour into a greased loaf pan. Pack well. 2. Bake in the oven at 350f (175c) about 1 hour, until meat is tender. Stand for a few minutes, drain off excess drippings. 3. With a knife, loosen the edges around the loaf. Place on a plate Serve sliced. Makes 6 - 8 servings. Serve with creamy mashed potatoes and steamed vegetables. |
